Vegetable Quiche

This colorful, savory pie features mushrooms, roasted red peppers, and scallions.

1/2 cup button mushrooms, sliced
1/2 cup roasted red pepper, chopped
1/4 cup scallions, sliced
3/4 cup mozzarella, shredded
2 Tbsp Parmesan cheese, grated
3 eggs
1 Tbsp Tulkoff Roasted Garlic Puree
1 1/4 cup milk
salt and pepper, to taste
1 prepared pie crust, pre-baked


Combine the mushrooms, peppers, and scallions in a bowl. Add the mozzarella and Parmesan and toss thoroughly to combine. Set aside.

In another bowl, whisk the eggs with the garlic and milk, adding salt and pepper to taste.
Evenly arrange the vegetable-cheese mixture in the bottom of the prepared pie crust. Pour the egg mixture on top.

Bake in a 350 degree oven for 35 to 45 minutes or until egg filling is set. Serve while still warm.
