Ingredients
10 tsp Tulkoff Chopped Garlic in Water
1 tomato, diced
2 egg yolks, at room temperature
2 tsp Dijon mustard
1 lemon, juiced
1 cup oil, room temperature
½ cup freshly grated Parmesan cheese
2 dozen corn in husks
Softened butter
Directions
In a food processor, mix chopped garlic, yolks, mustard and lemon juice until pale yellow and creamy. With machine still running, gradually add oil in a thin stream, stopping the machine occasionally to see that the oil is absorbed. Add cheese and mix briefly just to combine.
Prepare grill, allowing coals to burn down until just moderately hot.
Gently strip back husks from corn and remove silks. Rinse corn under cold water and pat dry with paper towels. Spread each ear with a bit of butter and then reassemble husk, twisting top to seal. Roast 20 minutes turning often. Serve with spread. Top with diced tomatoes.
